The Setting: Before you even take a bite, the architecture demands your attention. White-washed walls, grand staircases, and lush interior gardens create an atmosphere that feels both regal and intimate.
The Experience: You can choose between the Bar Barra for a more casual, high-energy pisco cocktail and à la carte experience, or the main dining room for the full tasting menu.Of course, the heart and soul of any great restaurant is its visionaries. At Astrid y Gastón, that role is filled by the exceptionally talented duo: Astrid Gutsche and Gastón Acurio. Together, they have become synonymous with the “New Peruvian Cuisine” movement. What truly elevated our evening, however, was seeing just how hands-on the owners remain.
Astrid spent a good part of the evening in the dining room, moving from table to table to welcome and converse with diners. Her warmth and genuine interest in our experience made the grand estate feel like an intimate gathering in a private home. It is rare to see such world-renowned chefs so deeply involved in the nightly pulse of the dining room.
The Starters: A Symphony of Small Bites
Our culinary adventure began with a parade of appetizers that were as beautiful to look at as they were delicious to eat. We shared the Chucuito Octopus, which was tender and perfectly charred, and the Tuna Tartare Corn Cake, a brilliant play on textures that married silky fish with the crunch of traditional Peruvian corn.
However, the undisputed star of the first course—and my best bite of the evening (actually the culinary highlight of our entire time in Peru)—was the Peking-Style Guinea Pig Taco. This clever, Peruvian riff on the Chinese classic featured succulent cuy with an incredibly crispy skin, served in a delicate taco format. It was a bold, unforgettable fusion that left the entire table impressed.
The Main Event: A Celebration of Flavor
As we moved to the mains, the table was filled with the rich aromas of Peru’s finest ingredients. Our selections included:
- Forever Duck Rice: A deeply savory, comforting dish where the duck was rendered to perfection.
- Ravioli Special: A seasonal pasta dish that was remarkably delicate and flavorful.
- Red Snapper Chimpum Callao: A vibrant tribute to the port of Callao, featuring fresh fish with bold, citrusy, and spicy notes that danced on the palate.
